VALENTINE'S DAY RECIPE CHOCOLATE MOUSSE
CHOCOLATE MOUSSE WITH REDCURRANT SAUCE

- 1 colander
- 1 Sheet of baking paper
Ingredients
For the mousse:
- 70 g dark chocolate 70% min
- 85 g fresh liquid cream
- 17 g Benvolio Organic Extra Virgin Olive Oil
- 7 g acacia honey
For the redcurrant sauce:
- 70 g redcurrants
- 7 g acacia honey
For the crunch:
- 7 g roasted hazelnuts (or peanuts or almonds)
- 7 g cane sugar
Instructions
- Let's start with the mousse! First you have to melt the dark chocolate in a bain-marie and place it in a bowl. Pour in our Organic Extra Virgin Olive Oil while stirring with a whisk.
- Pour the cream and honey into another bowl. Whip the cream with the mixer and pour it into the bowl with the chocolate and oil and mix everything together using the whisk.
- After the mixture is well blended, place it in the two glasses and put them in the refrigerator for about 30 minutes. Now let's prepare the currant sauce! Put the currants in a saucepan, add the honey and cook over a high flame for about 5 minutes until a sauce is obtained. Strain it through a colander and put it aside in the fridge.
- Let's finish with the crunch! Put the brown sugar in a saucepan and melt it over low heat. Once it has an amber colour, add the hazelnuts and stir to mix well. Transfer the mixture onto a sheet of baking paper and leave to cool.
- Now we can compose our small glasses! Take them out of the fridge and add the currant sauce and the crisp. Garnish with a few currant berries and serve. Happy Valentine's Day!
