The Benvolio 1938 selection of Seasoning Oil includes a wide range of products, some of which can also be used for properties in the kitchen, while others can be used exclusively as oil for raw dressing due to the great sensitivity to medium / high temperatures.
The Oil for Seasoning is basically a virgin oil cold extracted directly from the seed or fruit , subsequently filtered, or oil that after extraction from the seed or fruit undergoes a mild processing but which by nature possesses chemical characteristics that make it an enemy. of medium / high temperatures.
By nature, the oils that cannot be heated and that must be consumed raw are the linseed oil, the hemp oil and walnut oil, that due to the high content of polyunsaturated fatty acids, specifically Omega 3 (linolenic acid) e Omega 6 (linoleic acid), are very unstable at high temperatures.
The high temperature determines an alteration of their composition , with consequent loss of their nutritional properties and production of substances harmful to our organism, therefore they are to be used only as oil for raw dressing.
Essential fatty acids (AGE) are two lipids that must necessarily be introduced with food. Specifically, they are: Linoleic acid, progenitor of the Omega 6 fatty acids ; Alpha linolenic acid , progenitor of the Omega 3 series.

In the kitchen it should be used exclusively as an oil for raw dressing on various types of dishes as it is not suitable for cooking and frying, due to the presence of a high content of polyunsaturated fatty acids which makes it particularly sensitive to oxidation.
It is very versatile, as you can use it as an oil to dress a pasta dish, a chickpea hummus, a vegetable soup, grilled fish or a mixed salad.
It is also used by some together with yoghurt with cereals, but we suggest you do this test only if you are a fan of strong and far from soft tastes .
In salads and vegetables it can be used to prepare a delicious vinaigrette with lemon, pepper and salt, so as to add an extra touch to the “normal” side dishes, and give a touch of unpredictability to deviate from the more classic seasoning oil used normally in Italian kitchens.
