Ingredients (serves 2)
2 ripe tomatoes
1 cucumber
1 green bell pepper
1 red onion
150 g feta cheese
Kalamata olives
Dried oregano
Salt and pepper to taste
4–6 sprays of Olyxir or Coconut spray oil
1. Prepare the vegetables
Wash tomatoes, cucumber, pepper and onion thoroughly. Cut everything into medium-large pieces to keep the crunch and freshness.
2. Add feta and olives
Add cubed feta and Kalamata olives. This combination is the savoury heart of the recipe.
3. Season the base
Add salt, pepper and dried oregano. Don’t mix yet: the spray oil will take care of distributing the flavours evenly.
4. Spray the oil
Use 4–6 sprays of your chosen oil.With Organic Olyxir Spray Oil, you’ll get an aromatic, vegetal dressing, perfect for enhancing tomato, cucumber and feta.With Organic MCT Coconut Spray Oil, you get a cleaner, lighter, modern version. 5. Mix and serve
Mix gently to distribute the spray oil evenly. Serve immediately to maintain freshness and crunchiness.
