Extra virgin olive oil can be considered to all intents and purposes the pillar on which it stands the Mediterranean diet , the most famous diet in the world. Italians in particular just can’t do without it. Which is good, considering that, in addition to flavoring the dishes for which it is used as a condiment, it also has innumerable nutritional properties that are a panacea for the body. It is no coincidence, among other things, that the Mediterranean diet is considered a sort of passport to a long life.

Extra virgin olive oil is the foundation because, nutritionally,  it is a source of lipids that has no equal. Even just used raw it is able to give the body all the energy it needs to carry out normal vital and daily functions. Choosing a good quality EVO oil means taking care of your body and assuring it only the best. The mono-unsaturated fatty acids contained in it are highly digestible and allow to maintain the correct balance between  good cholesterol and bad cholesterol.

Cholesterol plays a particularly important role in the physiology of animals . The cholesterol molecule is irreplaceable in animal cell membranes . In pathology it contributes to the formation of gallstones and atheromas .

Evo oil is obtained by pressing only healthy olives , those that have never touched the ground . Its processing is done only with mechanical supports without the addition of additives . In practice, the olives are not subjected to chemical treatments . The degree of acidity of the oil must not exceed 0.8% .

Olive oil , on the other hand, comes from a blend of virgin olive oils and refined olive oils. The latter are obtained through a process in which they are used chemical agents to improve their chemical characteristics.

Olive oil is of lower quality than extra virgin olive oil: for example Vitamin E it deteriorates during the treatments necessary for the production of refined oil. It also has ahigher acidity , up to 1 % , which can cause digestive problems.

This element, a cornerstone of the Mediterranean diet , if consumed in the right quantities has beneficial effects on health. It treats and prevents various diseases: it reduces bad cholesterol (HLD) thanks to phytosterols, and increases the good one (HDL) thanks to mono-unsaturated fats , favoring cleaning of the arteries.

The first olive plantations took place about 6,000 years before the coming of Christ, exactly in Palestine and Syria. Only in 1000 BC the olive tree was imported into Italy.
Extra virgin olive oil can be divided into two groups:

  • Saponifiable: it represents about 99% and is made up of triglycerides.
  • Unsaponifiable: represents about 1% and is made up of various antioxidants and vitamins.

These antioxidant substances have very important properties and benefits for the health of our body. In fact, extra virgin olive oil for the skin of the face is very nourishing. The tingling sensation in the throat that is felt when tasting extra virgin olive oil is symptomatic of an extra touch of health. This sensation in fact depends on a substance with anti-inflammatory properties, recently discovered, called oleocanthal, which has the same effects as a pain-relieving substance called ibuprofen, which also seems to have anticancer properties. Olive oil is practically a fat in a liquid state at room temperature. A couple of teaspoons in the morning, on an empty stomach, can solve the problems of those afflicted with chronic constipation.
